Beef Chow Mein

Ingredients

Noodles

  • 280g egg noodles

Sauce

  • 1 pack chow mein sauce
  • 1 Tbsp soy sauce
  • 2 Tbsp sweet chilli sauce
  • 3 Tbsp water

Beef and Veggies

  • 2 carrots
  • 1 baby bok choy
  • 1 pack beef mince
  • 1 pack chow mein spices
  • 1½ cups frozen peas

To Serve

  • 1 spring onion

Have Handy

  • Oil
  • Salt & Pepper

Steps

  1. Cook noodles Bring a medium sized pot of hot salted tap water to the boil with a lid on. Once boiling, add noodles and cook for about 8 minutes, until tender. Drain and return to pot with a drizzle of sesame oil to avoid sticking.
  2. Make sauce Combine all sauce ingredients in a bowl with a drizzle of sesame oil.
  3. Prep veggies Grate carrots and thinly slice bok choy and spring onion. Heat a drizzle of oil in a large fry-pan (or wok) on high heat. Cook beef for 4-5 minutes, stirring until browned. Add chow mein spices and cook, stirring, for about 1 minute, until fragrant.
  4. Add carrots, bok choy and peas and cook for about 2 minutes, until veggies are just tender.
  5. Add noodles and sauce to pan with beef and veggies. Toss to warm through and season to taste. Add a pinch of chilli flakes for adults.
  6. Serve chow mein topped with spring onion.
