Cream Cheese and Mushroom Pizza

Ingredients

Pizzas

  • ¼ cup cream cheese
  • 1 Tbsp basil pesto
  • ¼ red onion
  • ½ pack white button mushrooms
  • 1 Tbsp tomato paste
  • 1 Tbsp sweet chilli sauce
  • 2 pizza bases
  • ¾ cup grated cheese

Salad

  • ½ Tbsp sweet chilli sauce
  • 1 tsp Dijon mustard
  • 1 baby lettuce
  • 1 tomato
  • ½ Lebanese cucumber

To Serve

  • 1 Tbsp basil pesto

Steps

  1. Prep cream cheese mixture Preheat oven to 220°C. Preheat two oven trays (or pizza stones if you have them. Mix cream cheese and basil pesto in a small bowl, until combined. Set aside.
  2. Prep pizzas Thinly slice onion and mushrooms. Mix tomato paste and first measure of sweet chilli sauce in a small bowl. Divide tomato paste mixture between bases, spread over evenly to cover and sprinkle with grated cheese.
  3. Sprinkle red onion and mushrooms evenly over pizzas, and dollop with pesto cream cheese. Season.
  4. Cook pizzas Transfer 1 pizza to each preheated tray and cook for 12-14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.
  5. Make salad In a large bowl, whisk together second measure of sweet chilli sauce, mustard and a drizzle of olive oil. Roughly chop lettuce, and dice tomato and cucumber 2cm. Toss all in bowl with sweet chilli mixture and season to taste.
  6. Serve pizza in wedges and drizzle with remaining basil pesto. Serve salad on the side.
