Roast Pumpkin and Haloumi Tray Bake

Ingredients

Pumpkin Tray Bake

  • 1/2 bunch baby carrots
  • 1 pack pumpkin
  • 1/2 pack haloumi spices
  • 1/2 pack haloumi
  • 1/3 bunch silverbeet
  • Remaining haloumi spices
  • 1/2 pack almonds

Hummunaise

  • 1 pack hummus
  • 1 Tbsp mayonnaise

Steps

  1. Prep veggies Preheat oven to 220°C. Cut any larger carrots in half lenghtways. Toss pumpkin and carrot on a lined oven tray with first measure of haloumi spices and a drizzle of oil. Season and roast in oven for 20 minutes.
  2. Prep haloumi Slice haloumi 1cm and toss in a bowl with a drizzle of olive oil and remaining spices. Remove white stem from silverbeet and thinly slice leaves until you have about 1 cup worth.
  3. Cook haloumi Once veggies have cooked for 20 minutes, add haloumi and silverbeet to tray and sprinkle with almonds. Return oven for about 5 minutes, until golden.
  4. Make hummunaise In a bowl, combine hummus and mayonnaise.
  5. Serve pumpkin and haloumi tray bake with a dollop of hummunaise.
