Roast Pumpkin and Haloumi Tray Bake

Ingredients

Pumpkin Tray Bake

  • 1 carrot
  • 1 beetroot
  • 1 pack pumpkin
  • 1/2 pack haloumi spices
  • 1 pack haloumi
  • Remaining haloumi spices
  • 1 pack almonds
  • 1/3 pack baby spinach

Hummunaise

  • 1 pack hummus
  • 1 1/2 Tbsp mayonnaise

Steps

  1. Prep veggies Preheat oven to 230°C. Cut carrot and beetroot into wedges. Toss pumpkin, carrot and beetroot on a lined oven tray with first measure of haloumi spices and a drizzle of oil. Season and roast in oven for 20 minutes.
  2. Prep haloumi Slice haloumi 1cm and toss in a bowl with a drizzle of olive oil and remaining haloumi spices.
  3. Cook haloumi Once veggies have cooked for 20 minutes, add haloumi to tray and sprinkle with almonds. Return oven for about 7 minutes, until golden.
  4. Make hummunaise In a bowl, combine hummus and mayonnaise.
  5. Prep spinach In a salad bowl, toss spinach with a drizzle of olive oil and vinegar.
  6. Serve pumpkin and haloumi tray bake with hummunaise and spinach.
