Roast Pumpkin and Haloumi Tray Bake

Ingredients
Pumpkin Tray Bake
- 2 carrots
- 1 beetroot
- 1 pack pumpkin
- 1/2 pack haloumi spices
- 2 packs haloumi
- Remaining haloumi spices
- 1 pack almonds
- 1/2 pack baby spinach
Hummunaise
- 1 pack hummus
- 3 Tbsp mayonnaise

Prep veggies Preheat oven to 230°C. Cut carrots and beetroot into wedges. Toss pumpkin, carrots and beetroot on a lined oven tray with first measure of haloumi spices and a drizzle of oil. Season and roast in oven for 20 minutes.

Prep haloumi Slice haloumi 1cm and toss in a bowl with a drizzle of olive oil and remaining haloumi spices.

Cook haloumi Once veggies have cooked for 20 minutes, add haloumi to tray and sprinkle with almonds. Return oven for about 7 minutes, until golden.

Make hummunaise In a bowl, combine hummus and mayonnaise.

Prep spinach In a salad bowl, toss spinach with a drizzle of olive oil and vinegar.

Serve pumpkin and haloumi tray bake with hummunaise and spinach.
