Asian Braised Beef with Jasmine Rice and Sesame Greens

Ingredients

Rice

  • 1 1/2 cups jasmine rice
  • 2 1/4 cups boiling water

Beef

  • 1 carrot
  • 1 pack beef spices
  • 1 pack sous vide beef
  • 1 1/4 cups hot water
  • 1 pack Asian beef sauce
  • 1 spring onion

Veggies

  • 1 broccoli
  • 1 baby bok choy

To Serve

  • 1 pack sesame seeds
  • 1 pack garlic chilli blend (optional, adults)

Steps

  1. Cook rice Bring a full kettle to the boil. Place rice, boiling water measure and a pinch of salt in a pot, bring to the boil with a lid on. Reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.
  2. Cook carrot Heat a drizzle of oil in a fry-pan on medium-high heat. Cut carrot in half and thinly slice, place in pan with a splash of water and cook for about 2 minutes until starting to soften. Add beef spices and cook stirring for 30 seconds, until fragrant.
  3. Cook beef Add beef, hot water measure and Asian beef sauce to pan. Stir gently and bring to a simmer. Simmer gently on low-medium heat for 8-10 minutes, until sauce has thickened and beef is cooked through.
  4. Prep and cook veggies Cut broccoli into small florets and thinly slice bok choy. Add to a heat-proof bowl and cover with boiling water. Cover with a plate and leave for about 5 minutes, until bright green and tender. Drain and toss with a drizzle of sesame oil and soy sauce, add to pan with beef and stir to combine. Thinly slice spring onion.
  5. Serve rice with beef, sauce, veggies and spring onion. Sprinkle with sesame seeds and garlic chilli blend.
