Beef Steaks & Creamy Mushrooms

Ingredients

Pumpkin

  • 1 pack diced pumpkin
  • 1 pack pumpkin herbs
  • 1 pack pumpkin seeds

Beef

  • 1 pack beef sirloin steaks

Creamy Mushrooms

  • 1 pack sliced mushrooms
  • 1/2 pack baby silverbeet
  • 2 Tbsp lite sour cream

Steps

  1. Before you start, preheat oven to fan bake 230°C.
  2. Roast pumpkin Toss pumpkin, pumpkin herbs and pumpkin seeds on a lined oven tray with a drizzle of oil. Roast for 15 minutes, until cooked.
  3. Meanwhile, cook beef Heat a drizzle of oil in a medium fry-pan on high heat. Pat beef dry, season and cook for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Remove from pan and wrap in foil to rest. Keep pan on heat.
  4. Make mushroom sauce Add a drizzle of oil to same pan. Cook mushrooms with a pinch of salt, stirring for 3-4 minutes, until softened. Stir through baby silverbeet to wilt and add a splash of water to remove any pan brownings. Reduce heat to medium, stir through sour cream and beef resting juices. Remove from heat and season. Slice beef.
  5. Serve pumpkin with beef and creamy mushrooms.
