Spanish Beef Meatballs with Garlic Butter Mash

Ingredients

Spanish Meatballs

  • 1 pack beef mince
  • 1 Tbsp Spanish spices
  • 1 pack panko breadcrumbs
  • 1 egg
  • 50g feta cheese

Garlic Mash

  • 400g potatoes
  • 1 parsnip
  • 1 clove garlic
  • 1/4 cup milk
  • 1 Tbsp butter

Tomato Sauce

  • 1 clove minced garlic
  • Remaining Spanish spices
  • 1 can chopped tomatoes
  • 1/2 cup chicken stock
  • 1/2 bunch silverbeet
  • 1 pack green olives

To Serve

  • 1 bunch basil, chopped

Steps

  1. Prep potatoes & meatballs Preheat oven to 220°C. Peel and dice potatoes and parsnip 2cm and set aside. Combine meatball ingredients (except feta) in a bowl along with 1/2 tsp of salt. Dice feta. Use a quarter cup measure to divide meatball mixture. Flatten each measure slightly and place a piece of feta in the centre. Shape into a ball to enclose feta.
  2. Cook meatballs Heat a drizzle of oil in an oven-proof fry-pan on medium heat. Cook meatballs for about 4 minutes, until browned on all sides but not cooked through. Set meatballs aside and keep pan on a medium heat.
  3. Cook sauce Add a drizzle of oil to pan (if needed). Cook second measure of garlic and remaining Spanish spices for about 30 seconds, until fragrant. Add canned tomatoes and stock, bring to a simmer and cook for about 5 minutes, until slightly thickened.
  4. Cook potatoes While sauce cooks, add potatoes, parsnip and first measure of garlic (whole cloves) to a pot of water and cook, with the lid on, for about 15 minutes, until tender. Drain and return to pot with milk and butter and mash until smooth. Season to taste.
  5. To finish Remove white stem from silverbeet and thinly slice leaves until you have about 2 cups worth. Stir silverbeet through tomato sauce and season to taste. Return meatballs to pan along with olives. Bake in oven for about 10 minutes, until meatballs are cooked through and sauce has thickened. Set aside to rest for a few minutes before serving.
  6. Serve garlic mash topped with Spanish beef meatballs and basil.
