Mexican Beef and Bean Burritos

Ingredients
Mexican Beef
- 1 brown onion, finely diced
- 1 clove garlic, minced
- 1 pack Mexican beef grind
- 1 carrot, grated
- 1 pack Mexican spice mix
- 1 can chopped tomatoes
- 1/2 cup water
- 1 can mild chilli beans
- 2 Tbsp sweet chilli sauce
Salsa
- 2 tomatoes, finely diced
- 1/2 telegraph cucumber, finely diced
- 1 pack Mexican dressing
To Serve
- 1 pack tortillas
- 1/2 cup grated cheese
- 1/4 cup sour cream
- 1 pack garlic chilli blend

Preheat oven to 200°C. Prep onion & garlic & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Add beef and cook for 3-4 minutes, until browned. Add onion, carrot and garlic and cook a further 2 minutes.

Cook beef. Add Mexican spice mix and 1 tsp salt to pan and cook for 2 minutes, until fragrant. Add canned tomatoes, water measure, beans and sweet chilli sauce, bring to a simmer, reduce heat to medium and simmer for about 10 minutes, until thickened.

Prep & make salsa. Combine salsa ingredients in a bowl and season to taste.

Heat tortilla. Wrap tortillas in foil and bake for about 10 minutes, or until heated through.

Serve beef and beans in tortillas and top with cheese, salsa, sour cream and garlic chilli blend.
