Spring Beef Cottage Pie

Ingredients

Topping

  • 400g potatoes, peeled & diced 2cm
  • 400g kumara, peeled & diced 2cm
  • 3 Tbsp milk
  • 1/3 block cheese, grated

Pie Filling

  • 1/2 leek, finely diced
  • 1 pack beef mince
  • 1 pack cottage pie spices
  • 3/4 cup hot water
  • 250g frozen peas
  • 1 Tbsp tomato sauce
  • 2 tsp soy sauce

Beans

  • 1 pack green beans, ends trimmed
  • Pinch garlic chilli blend (optional, adults only)

Steps

  1. Preheat oven to high grill. Prep & cook topping. Add potato and kumara to a medium pot with a pinch of salt and cover with hot tap water. Bring to the boil, covered, on high heat and cook for about 20 minutes, until very soft. Drain, then mash with milk and a knob of butter, until smooth. Season to taste.
  2. Meanwhile, prep & cook pie filling. Heat a drizzle of oil in an oven-proof fry-pan on medium-high heat. Cook leek for 2-3 minutes, until softened. Add beef and cook, stirring, for 4-5 minutes, until browned. Add cottage pie spices and cook, stirring, for 30 seconds.
  3. Add hot water measure, peas, tomato sauce and soy sauce. Bring to a simmer and cook for about 5 minutes, until thickened. Season to taste.
  4. Grill topping. Evenly spread mash over the top of the beef filling and sprinkle with cheese. If you don’t have an oven-proof fry-pan transfer to an oven-proof dish. Grill on middle rack of oven for 5-6 minutes, until bubbling and starting to brown.
  5. Cook green beans. Heat a drizzle of oil in a fry-pan on medium-high heat. Stir-fry beans for 3-4 minutes, until just tender. Sprinkle with garlic chilli blend (adults only) and season to taste.
  6. Serve cottage pie with beans.
