Spanish Lamb with Pearl Couscous

Ingredients

Lamb

  • 1 pack Spanish lamb

Couscous

  • 1 pack pearl couscous

To Serve

  • 150g yoghurt
  • 1 pack sliced almonds

Steps

  1. Preheat oven to 180°C. Bring a pot of salted water to the boil.
  2. Cook lamb. Remove seal film from meal and cover with foil. Place on an oven tray and cook for about 30-40 minutes, or until heated through. Remove from oven, on tray. Alternatively, spoon meal into an oven dish, cover with foil and cook at 200ºC for about 25-35 minutes, until heated through.
  3. Cook couscous. Cook couscous in boiling water for about 12 minutes, until tender. Drain and return to pot with a drizzle of olive oil to prevent sticking.
  4. Serve couscous topped with Spanish lamb, yoghurt and almonds.
