Greek Lamb Mezze Plates with Hummus, Bulgur, Feta & Olives

Ingredients
BULGUR
- 1 pack spiced bulgur
- 1/2 cup boiling water
LAMB
- 1/2 red onion, finely diced
- 1 pack Greek spices
- 1 pack lean ground lamb
- 1/2 cup chicken stock
TO SERVE
- 1 baby lettuce, separated into cups
- 1 tomato, diced 1cm
- 1/2 Lebanese cucumber, thinly sliced
- 1/4 pack olives
- 2 Tbsp yoghurt
- 1 pack hummus
- 30g feta cheese crumbled
- 1 bunch mint, leaves picked

Bring a full kettle of water to the boil.

Cook bulgur. Combine bulgur and boiling water measure in a heat-proof bowl with a pinch of salt. Cover and leave to steam for 15 minutes, until water has absorbed and grains are tender.

Prep & cook lamb. Heat 1/2 tsp oil in a fry-pan on medium-high heat. Cook onion for 1-2 minutes, until soft. Add Greek spices and cook for about 30 seconds, until fragrant. Add lamb and cook for 2-3 minutes, until browned.

Add stock and a pinch of salt and simmer, stirring occasionally for 3-4 minutes, until liquid has almost absorbed. Season to taste.

Prep serving ingredients. Arrange serving ingredients on a big board or platter.

Serve bulgur with lamb and serving ingredients.
