Beef Steak with Tomato Salad & Garlic Aioli

Ingredients

Chips

  • 400g potatoes, cut into chips
  • 1 carrot, cut into chips

Salad

  • 2 tomatoes, sliced
  • 1/2 Palermo capsicum, sliced
  • 50g feta cheese, crumbled

Beef

  • 1 pack beef scotch steaks
  • 1 pack beef spices

To Serve

  • 2 Tbsp garlic aioli

Steps

  1. Preheat oven to 220°C. Preheat BBQ grill to medium (if using). Prep & cook chips. Toss potato and carrot chips with a drizzle of oil on a lined oven tray. Season and bake for about 25 minutes, until tender and golden.
  2. Prep salad. Arrange tomatoes and capsicum on a plate. Sprinkle over feta.
  3. Cook beef. Pat beef dry, season and toss with beef spices and a drizzle of oil. Heat a drizzle of oil in a fry-pan on medium heat. Cook beef for 3-4 minutes each side for medium (depending on thickness) or until cooked to your liking. Rest, covered. Alternatively, do this on the BBQ.
  4. To finish. Just before serving, drizzle salad with a little olive oil and vinegar. Season. Thinly slice beef and toss in any resting juices.
  5. Serve beef, chips and salad with garlic aioli.
