Bacon and Vegetable Tart with Slaw

Crispy bacon is combined with pumpkin, red onion, broccoli, thyme and tasty cheese.


Ingredients

BACON AND VEGETABLE TART

  • 400 g pumpkin, peeled and diced 1.5cm
  • ½ red onion, diced
  • 300 g diced bacon
  • 1 head broccoli, cut into small florets
  • 1 tablespoon thyme leaves
  • 1 tablespoon flour
  • 1 sheet puff pastry
  • 1 egg, lightly beaten
  • ½ cup grated tasty cheese

SLAW

  • ¼ cabbage
  • 1 carrot
  • ¼ cup mayonnaise
  • 1 tablespoon white wine vinegar

Steps

  1. oven to 230°C. Line two oven trays with baking paper.
  2. Toss pumpkin, onion, bacon, broccoli and thyme with a drizzle of olive oil prepared tray. Season with salt and pepper and roast for 12–15 minutes or until pumpkin is just cooked. Set aside and allow to cool slightly.
  3. While vegetables cook, prepare pastry. Dust a clean, dry, bench with flour and lay pastry out flat. Use a rolling pin or wine bottle to roll out pastry to measure about 30cm x 30cm. Place on second prepared tray and cover with another tray (to weigh pastry down while it cooks). Bake for 18 minutes.
  4. Lightly brush cooked pastry with beaten egg. Top evenly with roast vegetables (leaving a 1cm gap around edge) and sprinkle with cheese. Bake, uncovered, for 8–9 minutes or until cheese is melted and pastry is golden. Allow to cool slightly before cutting into squares.
  5. While tart is cooking, prepare slaw; thinly shred cabbage and grate carrot. Place in a large bowl with mayonnaise and vinegar and toss to combine. Season with salt and pepper.
  6. Place a slice of the tart onto each plate and serve with slaw on the side.
