Lamb Meatballs with Tomato Sauce, Seasoned Oven Chips and Salad

These meatballs can be mixed and rolled in advance, or you can cook the whole meatball and sauce element of the recipe beforehand.


Ingredients

SEASONED OVEN CHIPS

  • 600 g potatoes, scrubbed and cut into 1cm chips
  • ½–1 tablespoon chip seasoning (optional, adults)

LAMB MEATBALLS

  • 450 g lamb mince
  • ½ cup fine breadcrumbs
  • 1 carrot, grated
  • 1 egg
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons meatball spice mix
  • ½ brown onion, finely diced
  • ½ teaspoon salt

TOMATO SAUCE

  • 1 tablespoon olive oil
  • ½ brown onion, finely diced
  • 1 clove garlic, mince or finely chopped
  • 1 jar tomato passata
  • 1 teaspoon sugar
  • ½ teaspoon balsamic vinegar
  • ¾ cup grated colby cheese

SALAD

  • 1 capsicum
  • 1 Lebanese cucumber
  • ½ bag baby spinach leaves

Steps

  1. oven and a medium casserole/lasagne style dish to 220°C. Line an oven tray with baking paper.
  2. Toss potatoes with chip seasoning (if using) and a drizzle of oil on prepared tray. Season with salt and pepper and bake for 25–30 minutes, until golden and cooked through. Turn once during cooking.
  3. Combine all lamb meatball ingredients in a medium bowl and mix well using clean hands. Use a tablespoon to measure mixture and roll into golf-ball sized balls. Place into preheated baking dish, in a single layer, and bake for 10 minutes (on oven rack below chips).
  4. While meatballs and chips bake, prepare sauce; heat olive oil in a medium pot on medium heat. Cook onion and garlic for 3–4 minutes, until soft. Add passata, sugar and balsamic vinegar and bring to the boil then simmer for 3–4 minutes. Season with salt and pepper.
  5. Remove meatballs from oven and pour sauce over to cover. Sprinkle over cheese and bake a further 10 minutes, until cheese is melted and golden. If cheese does not become golden, remove chips from oven, increase oven to grill and grill for 2 minutes.
  6. Prepare salad; remove core and seeds from capsicum and thinly slice; cut cucumber in half lengthways and thinly slice on an angle; toss all with spinach in a medium bowl with a drizzle of olive oil.
  7. Divide seasoned oven chips between plates with baked lamb meatballs and sauce. Serve salad on the side.
