Moroccan-Spiced Pork with Vegetable Couscous and Yoghurt Dressing

Tasty pan-fried Moroccan-spiced pork with a veggie filled couscous


Ingredients

MOROCCAN-SPICED PORK

  • 450 g pork scotch fillet
  • 2-3 teaspoons Moroccan seasoning
  • 1 tablespoon olive oil

VEGETABLE COUSCOUS

  • 1 1/4 cups chicken or vegetable stock
  • 1 1/4 cups couscous
  • 1 tablespoon butter
  • 1 capsicum
  • 2 courgettes
  • 1/2 baby cabbage
  • 60 g golden raisin and almond mix
  • 1/4 cup roughly chopped parsley

YOGHURT DRESSING

  • 1/2 cup natural yoghurt
  • 1/2 teaspoon Moroccan seasoning
  • 1/2 teaspoon runny honey (optional)

Steps

  1. BBQ hot plate to high (if using).
  2. Pat pork dry with paper towels, coat in spice mix and leave to marinate while you prepare the rest of the meal.
  3. Add stock to a medium pot and bring to the boil. Add couscous, remove from heat, stir and cover with a lid. Leave to stand for 10 minutes then add butter and fluff up grains with a fork.
  4. Prepare vegetables; remove core and seeds from capsicum and dice 1cm; dice courgettes 1cm; roughly chop cabbage. Set all aside.
  5. Season pork with salt. Heat oil in a large fry-pan (preferably nonstick) on medium to high heat. Cook pork for 2–3 minutes each side or until cooked medium. Alternatively use BBQ hot plate. Set aside, covered with foil, to rest for 5 minutes. Slice thinly against the grain. Keep pan on heat.
  6. Add a drizzle of oil to same pan and stir-fry capsicum, courgette and cabbage for about 4 minutes until just tender. Alternatively, use BBQ hot plate. Toss cooked vegetables, raisins and almond mix and parsley through cooked couscous. Season to taste with salt and pepper. Mix all yoghurt dressing ingredients together in a small bowl.
  7. Spoon vegetable couscous onto plates and top with pork. Drizzle over yoghurt dressing.
