Beef Pitas with Garlic Potatoes and Greek Salad

Fun beef patties in pita pockets with a summery Greek salad


Ingredients

GARLIC POTATOES

  • 500 g baby potatoes, cut into halves or quarters (so they’re a similar size)
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

BEEF PATTIES

  • 450 g beef mince
  • 1 tablespoon beef patty seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 red onion, finely diced or grated
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce

GREEK SALAD

  • 1 tomato
  • 1/2 telegraph cucumber
  • 1/2 red onion
  • 1 iceberg lettuce
  • 50 g feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar (optional, adults)

TO SERVE

  • 8 mini pita breads
  • Tomato sauce (optional)

Steps

  1. oven to 170°C and line an oven tray with baking paper (if using oven to warm pitas). Preheat BBQ hot plate or grill (if using). Bring a large pot of salted water to the boil.
  2. Cook potatoes in pot of boiling water for about 15 minutes or until just tender, then drain well. Add butter and garlic to same pot, return to low to medium heat and cook for one minute, until garlic is fragrant. Return potatoes to pot, toss to coat, remove from heat, cover and set aside.
  3. While potatoes are cooking, add all beef patty ingredients to a large bowl and mix well using clean hands. Use a ¼ cup measure to scoop out mixture and damp hands to shape into patties, about 1.5cm thick. Heat a drizzle of olive oil in a large fry-pan on medium to high heat. Cook patties for 2–3 minutes each side or until brown and cooked through. Alternatively, use BBQ hot plate or grill.
  4. Cut tomato and cucumber in half lengthways and thinly slice; thinly slice onion; shred lettuce; crumble feta. Add to a large bowl with olive oil and vinegar (if using) and season with salt and pepper. Alternatively, toss with your favourite salad dressing.
  5. Place pita breads on prepared oven tray (if using oven) and toast for 3–4 minutes. Alternatively, toast on BBQ hot plate for 1–2 minutes, or in toaster. Use a knife to cut part way through horizontally, leaving a hinge.
  6. Place all ingredients on the table and let everyone fill their own pitas with a little tomato sauce (if using), a patty and some salad. Serve extra salad with garlic potatoes on the side.
