Chipotle Pulled Pork Ravioli and Salad

Chipotle pulled pork ravioli, a mouth watering combination!


Ingredients

CHIPOTLE PULLED PORK RAVIOLI

  • 500 g pulled pork ravioli
  • 1 tablespoon olive oil
  • 1/2 tablespoon butter
  • 1 white onion, finely diced
  • 2 carrots, grated
  • 1 courgette, grated
  • 2 cans chopped tomatoes
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1 1/2 cups grated edam cheese
  • 1 teaspoon smoked paprika

DRESSING

  • 1 1/2 tablespoons vinegar (e.g. cider, white wine, red wine)
  • 1/2 teaspoon mustard (e.g. wholegrain, Dijon)
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt

SALAD

  • 1/2 - 1 iceberg lettuce, roughly chopped
  • 1/2 telegraph cucumber, cut in half lengthwise then sliced
  • 2 tablespoons chopped parsley, to serve

Steps

  1. grill to high. Bring a large pot of salted water to the boil.
  2. Cook ravioli in pot of boiling water (water should be on a rolling boil, not boiling rapidly to avoid filling bursting), for 2–3 minutes until al dente (just tender). Ravioli will float to surface when cooked. Drain, place into a medium baking dish and toss with a drizzle of olive oil to avoid sticking.
  3. Heat oil and butter in a large fry-pan on low to medium heat. Cook onion for 3–4 minutes until softened and lightly coloured. Add carrots and courgette and cook a further 2 minutes. Stir through tomatoes, Worcestershire sauce and sugar. Season with salt and pepper and simmer for 2 minutes, then pour over ravioli. Gently stir to evenly distribute sauce. Scatter cheese over top and sprinkle with smoked paprika. Grill for 3–5 minutes, or until cheese is melted and golden. Check regularly to avoid topping burning.
  4. While ravioli bakes, prepare salad. In a small bowl, whisk all dressing ingredients together. Place lettuce and cucumber into a medium bowl. Toss dressing through salad or drizzle over when serving. Leave some salad plain for the kids if preferred.
  5. Divide chipotle pulled pork ravioli between plates and serve salad on the side. Sprinkle over parsley.
