Korean Steak Wraps with Salad

Marinate the beef sirloin the night before to help add flavour, tenderise the meat and save even more time!


Ingredients

BEEF AND MARINADE

  • 150g beef sirloin steak (at room temperature)
  • 2 teaspoons soy sauce
  • 1/2 tablespoon water
  • 1 clove garlic, minced
  • 1 teaspoon finely grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground coriander
  • 2–3 tablespoons water

SALAD

  • 1/2 capsicum
  • 1 handful baby spinach leaves
  • 1/2 punnet cherry tomatoes
  • 2 tablespoons Thai herbs
  • 1 tablespoon sesame seeds
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon vinegar (e.g. cider, white wine, rice)

TO SERVE

  • 2 tortilla wraps
  • 1–2 lemon wedges

Steps

  1. BBQ hot plate to high (if using).
  2. Pat beef dry with paper towels. In a small bowl, combine all beef and marinade ingredients (except water), toss to coat well and set aside to marinate at room temperature.
  3. While steak is marinating, make the salad; remove core and seeds from capsicum and thinly slice; roughly chop spinach; cut cherry tomatoes in half; chop herbs; combine in a medium bowl and set aside.
  4. Heat a small, dry, fry-pan (preferably non-stick) on medium heat. Toast sesame seeds for 1–2 minutes, until golden, moving frequently. Remove from pan and set aside in bowl with salad. Add a drizzle of oil to pan. Remove beef from marinade (reserving excess) and cook for about 2 minutes each side, for medium-rare (depending on thickness) or until cooked to your liking. Alternatively, cook on BBQ hot plate. Set aside to rest, wrapped in foil, for 5 minutes.
  5. Remove pan from heat. Add water to reserved marinade and pour into pan and simmer for about 30 seconds, until sticky and reduced.
  6. Wrap tortillas in cling film and heat in microwave for about 30 seconds. Alternatively warm in a dry fry-pan for about 30 seconds each tortilla. Thinly slice beef and toss quickly in the sticky marinade. Add remaining salad ingredients to salad and toss to combine.
  7. Place a few slices of beef on a warm tortilla and top with some salad. Squeeze over lemon juice, roll up and enjoy.
