Beef Sirloin with Smoky Chips, Spinach Salsa, Pink Pickles and Chipotle Sour Cream

Juicy Beef sirloin served with spicy chipotle chips, pink pickles and chipotle sour cream!


Ingredients

SMOKY CHIPS

  • 400g potatoes, scrubbed
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle salt

SIRLOIN

  • 300g beef sirloin steak (at room temperature)

SPINACH SALSA

  • 1/2 telegraph cucumber
  • 1/2 bag baby spinach leaves
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 2 tablespoons chopped coriander leaves and stalks
  • Juice of 1 lime

CHIPOTLE SOUR CREAM

  • 1/4 cup sour cream
  • 1 tablespoon chipotle ketchup

TO SERVE

  • 1/4 cup pink pickles
  • 2 tablespoons pepitas
  • 1 tablespoon roughly torn coriander

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Preheat BBQ grill to high (if using).
  2. Cut potatoes into 1.5cm-thick chips. Toss with oil and chipotle salt on tray. Roast for 20–25 minutes, until golden and crispy. Turn once during cooking.
  3. Pat beef dry and season. Heat a drizzle of oil in a fry-pan on high heat. Cook beef for 2 minutes on all four sides, until brown. When potatoes have 10 minutes cook time remaining, push potatoes to one side, place beef on other side. Roast for 7 minutes for mediumrare or cooked to your liking. Remove from oven and cover and rest for 5 minutes.
  4. While beef is roasting, prepare the salsa. Dice cucumber 0.5cm; finely chop spinach. Combine oil and garlic in a bowl then add cucumber, spinach and all remaining spinach salsa ingredients. Season to taste with salt and mix well.
  5. In a bowl, combine sour cream and chipotle tomato sauce and mix well.
  6. Lay a few slices of beef on each plate alongside some smoky chips. Spoon a generous amount of spinach salsa over beef and top with pink pickles. Sprinkle over pepitas and coriander. Serve a dollop of chipotle sour cream on the side.
