Beef Scotch with Miso Kumara Mash and Thai Slaw

Deliciously marbled scotch is matched with a miso infused kumara mash, and Thai inspired slaw with peanuts and authentic Thai basil with hints of aniseed.


Ingredients

MISO KUMARA MASH

  • 150g orange kumara, peeled and diced 1cm
  • 1 teaspoon white miso paste
  • 1 teaspoon butter
  • 1–2 teaspoons milk

THAI SLAW AND BEEF SCOTCH

  • 50g snow peas, stringy part removed
  • 1/2 punnet little sweetie capsicums
  • 1/4 of half cabbage
  • 1 tablespoon finely chopped Thai basil
  • 1/2 tablespoon chopped roasted peanuts
  • 150g beef scotch steak (at room temperature)

DRESSING

  • 1/2 teaspoon runny honey
  • Juice of 1/2 a lemon
  • 1/4 teaspoon fish sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil

TO SERVE

  • 1/2 tablespoon chopped roasted peanuts
  • 1 tablespoon Thai basil, roughly torn

Steps

  1. a small pot of salted water to the boil. Preheat BBQ grill to high (if using).
  2. Cook kumara in pot of boiling water for 8–10 minutes, or until tender. Drain, return to pot with miso paste, butter and milk and mash until smooth.
  3. While kumara is cooking, prepare the slaw. Finely slice snow peas lengthways; remove core and seeds from capsicum and finely slice; thinly slice cabbage until you have about ¾ cup worth. Add to bowl with Thai basil and first measure of peanuts.
  4. Heat a drizzle of olive oil in a small fry-pan on medium-high heat. Pat beef dry, season with salt and pepper and cook for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Wrap in foil to rest for 2–3 minutes. Slice if desired.
  5. In a small bowl mix together all dressing ingredients. Add half the dressing to Thai slaw, season with salt and pepper and toss to combine.
  6. Spoon miso kumara mash onto a plate and top with beef. Serve Thai slaw on the side and sprinkle over peanuts and Thai basil.
