Chicken Drums with Creamy Leeks, Silverbeet and Kumara Roasties

Ingredients

CHICKEN WITH CREAMY LEEKS AND SILVERBEET

  • 10 chicken drumsticks
  • 1/4 teaspoon salt ˜
  • 2 tablespoons flour ˜
  • 1 tablespoon oil ˜
  • 1 leek, white and pale green part only
  • 1 clove garlic
  • 1 tablespoon butter ˜
  • 1/2 cup white wine or chicken stock ˜
  • 1 cup chicken stock ˜
  • 1 teaspoon mustard (e.g. wholegrain or Dijon)
  • 1/2 bag baby silverbeet leaves
  • 125g sour cream

KUMARA ROASTIES

  • 600g orange kumara, scrubbed

BROCCOLI

  • 1 head broccoli, cut into florets

Steps

  1. oven to ‚ƒ„210°C. Line two oven trays (one with a lip) with baking paper.
  2. Heat a drizzle of oil in a fry-pan on medium-high heat. Pat chicken dry and toss in a bowl with salt, flour and oil. Cook for 2 minutes on each of 2 sides, until golden (does not have to be cooked through). Remove and place on lipped tray. Bake on top rack for about 25€ minutes, until cooked through.
  3. While chicken is cooking, dice kumara 2–3‡cm and toss on second tray with a drizzle of oil. Season with salt and pepper and bake for about 25€ minutes, until cooked through.
  4. Thinly slice leek and garlic. Heat butter in same pan on medium heat and cook leek and garlic for 5 minutes. Add wine/stock and cook until evaporated, 1-2 minutes. Stir through stock and mustard and bring to a simmer. Chop silverbeet and add to mixture. Turn off heat and stir through sour cream.
  5. Bring a pot of salted water to the boil and cook broccoli for 2–3‡ minutes, until bright green and tender. Drain.
  6. Add cooked drums (and any cooking juices) to pan with creamy leeks and silverbeet. Return to medium heat and simmer for about 1‚ minute, until thickened slightly. Season to taste with salt and pepper.
  7. Spoon kumara roasties onto plates and top with a couple of drums and some creamy leek and silverbeet sauce. Serve broccoli on the side.
