Moroccan Beef with Couscous Salad and Yoghurt Drizzle

Ingredients

MOROCCAN BEEF

  • 450g beef minute steaks (at room temperature)
  • 1 tablespoon family Moroccan spice mix (optional, adults)
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil

VEGETABLES

  • 2 tomatoes
  • 1/2 telegraph cucumber
  • 1/2 bag baby spinach leaves
  • 1 carrot

COUSCOUS

  • 1 cup couscous
  • 1/4 teaspoon salt
  • 1/4 teaspoon family Moroccan spice mix
  • 50g dried apricots, chopped
  • 1 cup boiling water
  • 2 tablespoons olive oil
  • 1 teaspoon vinegar (e.g. red wine, white wine, cider) (optional, adults)

YOGHURT DRIZZLE

  • 1/2 cup natural yoghurt
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon runny honey

Steps

  1. a full kettle to the boil.
  2. Pat beef dry with paper towels and place in a bowl with Moroccan spice mix (if using), salt and half the oil. Rub spices into meat and set aside to marinate for 5–10 minutes.
  3. Prepare the vegetables; dice tomatoes and cucumber 1–2cm; roughly chop spinach leaves; peel and grate carrot; combine all in a large bowl.
  4. Combine couscous, salt, Moroccan spice mix, dried apricots, boiling water and half the olive oil in a large, heatproof bowl. Stir, cover and leave to swell for 5 minutes, then fluff up grains with a fork.
  5. Heat remaining oil in a large frypan on high heat and cook beef, in two batches, for 30 seconds – 1 minute each side, until browned. Take care not to overcook beef, it will continue cooking as it rests. Set aside on a plate, covered in foil to rest for 2–3 minutes.
  6. Toss couscous with all vegetables. Drizzle with remaining oil and vinegar (if desired) and season with salt and pepper. Combine all yoghurt drizzle ingredients in a small bowl.
  7. Slice beef thinly. Divide couscous salad between plates, top with Moroccan beef and some yoghurt drizzle.
