Pork and Herb Patties with Potato Leek Crush and Steamed Vegetables

Pork patties teamed up with potato leek crush.


Ingredients

POTATO LEEK CRUSH

  • 400g potatoes scrubbed, diced 2cm
  • ½–1 leek
  • ¼ cup sour cream
  • 1½ teaspoons water

PORK AND HERB PATTIES

  • 300g pork and herb grind
  • 1½ teaspoons oil

STEAMED VEGETABLES

  • 1 head broccoli
  • ½ bag frozen, shelled edamame beans, defrosted

TO SERVE

  • 1 tablespoon roughly chopped parsley leaves and stalks

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Bring a medium pot of salted water to the boil.
  2. Toss potatoes on prepared tray with a drizzle of oil. Season with salt and pepper then roast for about 25 minutes, until golden. Turn once during cooking.
  3. Using a ¼ cup measure and clean, damp hands, shape pork and herb grind into 5cm-wide patties (makes 5 patties). Heat oil in a medium fry-pan on medium-high heat. Cook patties for 3–4 minutes each side, or until cooked through. Transfer cooked patties to a plate and cover with foil to keep warm.
  4. Cut leek in half lengthways then thinly slice. Return pan used to cook patties on low-medium heat. Add a little oil if needed and cook leek for about 4 minutes, or until soft. Add water, remove from heat then fold through sour cream until combined.
  5. When potatoes have finished cooking, add to pan with leeks and lightly crush. Season to taste with salt and pepper then fold until crushed potatoes are coated in leek mixture.
  6. Cut broccoli into small florets and cook with edamame beans in pot of boiling water for 2–3 minutes, or until bright green and tender. Drain well and drizzle with a little olive oil. Season with salt and pepper.
  7. divide potato leek crush and steamed vegetables between plates. Top with pork and herb patties and garnish with parsley.
