Turkey Spaghetti Bolognaise with Slaw

Ingredients

TURKEY BOLOGNAISE

  • 1 brown onion, finely diced
  • 1 carrot, grated
  • 450g turkey mince
  • 1 tablespoon bolognaise spice mix
  • 1 jar passata
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/4 bag baby spinach leaves

SLAW

  • 2 tablespoons mayonnaise
  • 1 teaspoon balsamic vinegar
  • 1/4 cabbage
  • 1 carrot

TO SERVE

  • 400g spaghetti
  • 1/2 block Colby cheese, grated
  • 2 tablespoons basil leaves, roughly chopped
  • 2 pinches chilli flakes (optional, adults)

Steps

  1. a large pot of salted water to the boil.
  2. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and first carrot for 2 minutes, or until starting to soften.
  3. Add turkey mince to pan and cook, breaking up with a wooden spoon as it cooks, for 2–3 minutes, or until turkey starts to brown.
  4. Add bolognaise spice mix, passata, tomato paste and salt to pan with mince. Bring to a simmer and cook on a low-medium heat for 12–15 minutes, or until sauce begins to thicken and mince is cooked. Fold through baby spinach leaves and season to taste with pepper.
  5. While bolognaise cooks, cook spaghetti in pot of boiling water for 10–12 minutes or until just tender. Drain well, return to pot and drizzle with olive oil to prevent sticking
  6. While bolognaise and spaghetti cooks prepare the slaw. In a large bowl, combine mayonnaise and balsamic vinegar. Finely shred cabbage until you have 3 cups worth; grate second carrot. Add both to bowl with mayonnaise/ vinegar mixture and mix well. Season to taste with salt and pepper.
  7. divide spaghetti between bowls and top with a big spoonful of turkey bolognaise. Sprinkle with cheese, basil leaves and chilli flakes (if using). Serve slaw on the side.
