Pork Saussie Stew and Mash

A French sausage dish!


Ingredients

FETA POTATO MASH

  • 600g potatoes, peeled and diced 2cm
  • 2 tablespoons butter
  • 1/4 cup milk
  • 50g feta cheese

PORK TOULOUSE SAUSAGE STEW

  • 1 leek, white and light green part only
  • 1/2 bag baby silverbeet
  • 1 carrot
  • 1 tablespoon olive oil
  • 10 Toulouse sausages
  • 1 1/2 tablespoons sausage spice mix
  • 1 carton chopped tomatoes
  • 1 cup beef stock
  • 1 teaspoon sugar
  • 1 teaspoon balsamic vinegar

Steps

  1. a pot of salted water to the boil.
  2. Cook potatoes in pot of boiling water until very soft, 12–15 minutes. Drain and mash with butter and milk until smooth.
  3. Crumble feta and fold through mashed potatoes. Season to taste with salt and pepper.
  4. While potatoes are cooking, cut leek in half lengthways; finely slice leek and baby silverbeet; grate carrot.
  5. Heat oil in a large fry-pan on medium-high heat. Cook sausages for 2–3 minutes until browned, turning often. Add leek, carrot and sausage spice mix and cook for 2–3 minutes until leek is soft.
  6. Add all remaining pork Toulouse sausage stew ingredients, bring to a simmer and cook for 5–7 minutes until sausages are cooked and sauce has thickened. Season to taste with salt and pepper.
  7. Divide feta potato mash between plates and top with a big spoonful of pork Toulouse sausage stew.
