Rosemary Beef with Vegetable Wild Rice

This week’s beef is served with a wild rice mix, a combination of fragrant jasmine rice and an organic, long grain black rice.


Ingredients

VEGETABLE WILD RICE

  • 1 cup GF wild rice mix
  • 1½ cups water
  • 1 capsicum, core and seeds removed and diced 2cm
  • 1 red onion, diced 2cm
  • 1 carrot, cut in half lengthways and sliced 1cm
  • 200g orange kumara, scrubbed and diced 2cm
  • 100g GF sundried tomato pistou
  • ½ bag baby spinach leaves

ROSEMARY BEEF

  • 550g beef sirloin steaks (at room temperature)
  • 2 teaspoons finely chopped rosemary leaves

TO SERVE

  • 40g GF mixed seeds

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  3. Toss capsicum, onion, carrot and kumara with a drizzle of olive oil on prepared tray. Season with salt and pepper and roast for 18–20 minutes, until golden and just starting to caramelise. Turn once during cooking.
  4. When vegetables have 10 minutes cook time remaining, heat a drizzle of oil in a fry-pan on medium-high heat. Pat beef dry with paper towels. Season with salt and pepper and rub in rosemary. Cook for 2–3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking.
  5. Set beef aside, covered in foil, to rest for 2 minutes before slicing against the grain.
  6. Add sundried tomato pistou, spinach and roasted vegetables to cooked wild rice and mix well to combine. Season to taste with salt and pepper.
  7. Divide vegetable wild rice between plates, top with slices of rosemary beef and sprinkle over some mixed seeds.
