Beef and Bacon BBQ Pizzas with Creamy Salad

Ingredients

BEEF AND BACON BBQ PIZZA

  • 2 wholemeal pizza bases
  • 70g tomato paste
  • 2 cups grated Colby cheese
  • 300g beef and bacon mince grind
  • 1 can pineapple pieces, drained and pieces cut in half
  • 50g BBQ sauce (optional, adults)
  • 1 spring onion, thinly sliced (optional, adults)

CREAMY SALAD

  • 1/2 lettuce
  • 1/2 telegraph cucumber
  • 1 carrot
  • 1/4 teaspoon mustard (e.g. Dijon, wholegrain)
  • 3 tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine)

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Lay two sheets of baking paper on bench and place a pizza base on top of each sheet. In a small bowl, mix tomato paste with a drizzle of olive oil. Divide between bases and spread to cover. Sprinkle cheese evenly over bases.
  3. Using clean fingers, break off small portions (about a heaped teaspoon worth) of beef and bacon mince grind and place evenly over pizzas. Scatter pineapple evenly over pizzas and season with salt and pepper.
  4. Carefully lift up baking paper with bases on top and place on preheated oven trays (or stones) then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for about 12 minutes until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.
  5. While pizzas are cooking, finely slice lettuce; dice cucumber 1cm; peel and grate carrot. Place all in a large bowl and set aside. In a separate, small bowl, whisk mustard, mayonnaise and vinegar, until smooth. Drizzle 3 tablespoons of the dressing over salad, toss to combine and season with salt and pepper.
  6. When pizzas have finished cooking, drizzle over BBQ sauce and sprinkle over spring onions (if using).
  7. Slice beef and bacon BBQ pizzas into 6–8 pieces and divide between plates. Serve creamy salad on the side.
