Chicken Poppers with Hand Cut Chips, Slaw and BBQ Sauce

Ingredients
HAND CUT CHIPS
- 600g potatoes, cut into 1cm-thick chips
CHICKEN POPPERS
- 550g chicken breasts
- 2 teaspoons chicken poppers spice mix
- ½ teaspoon salt
- 2 tablespoons cornflour
- 1 egg
- 1½ cups panko breadcrumbs
SLAW
- 2 tablespoons mayonnaise
- 1 teaspoon vinegar (e.g. red, white wine)
- ½ teaspoon mustard (e.g. Dijon, wholegrain)
- ½ iceberg lettuce
- 1 carrot
- 1 apple
- 1 Lebanese cucumber
TO SERVE
- 100g BBQ sauce

oven to 230°C. Line an oven tray with baking paper.

Toss chips with a drizzle of oil on prepared tray and season with salt. Roast for 25–30 minutes, until golden and cooked through. Turn once during cooking.

Dice chicken 2cm, place in a large bowl with chicken poppers spice mix and salt and toss to coat. Sprinkle over cornflour, coating all chicken. In a small bowl (or cup) whisk egg and pour over chicken, making sure all chicken is covered in egg.

Place panko breadcrumbs in a third bowl. Coat chicken with breadcrumbs, one handful at a time. Set aside, then make the salad.

In a large bowl mix mayonnaise, vinegar and mustard. Finely slice lettuce; peel and grate carrot; cut apple into thin matchsticks; slice cucumber in half lengthways then thinly slice. Add all to bowl with dressing, toss to combine and set aside.

Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook chicken, in batches, for about 2 minutes each side, until golden and just cooked through. Wipe pan out between batches and add more oil as needed. Season cooked chicken poppers with salt and pepper to taste.

Divide hand cut chips, chicken poppers and slaw between plates. Serve BBQ sauce on the side.
