Beef and Bacon Bolognaise

A quick and easy take on a Bolognaise.


Ingredients

BEEF AND BACON BOLOGNAISE

  • ½ brown onion, finely diced
  • 1 carrot, grated
  • 1 courgette, grated
  • 1 clove garlic, minced
  • 450g beef and bacon mince
  • 2 teaspoons dried herb mix
  • ½ cup red wine or beef stock
  • 1 can whole peeled tomatoes
  • 70g tomato paste
  • 1 teaspoon brown sugar
  • 1 teaspoon balsamic vinegar
  • 1/3 bag baby spinach leaves

TO SERVE

  • 400g spaghetti
  • ¼ cup Colby cheese
  • 1 pinch of chilli flakes (optional, adults)

Steps

  1. a large pot of salted water to the boil.
  2. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion, carrot, courgette and garlic for 4–5 minutes, until softened. Add beef and bacon mince and cook a further 3–4 minutes, breaking up mince with a wooden spoon as it cooks. Add dried herb mix and stir.
  3. Add red wine/stock to mince and cook for 1 minute, until liquid has evaporated. Place canned tomatoes into a bowl and squeeze with your hands to break up tomatoes.
  4. Stir through tomato paste, broken up tomatoes, brown sugar and balsamic vinegar. Reduce heat to medium and simmer for about 3 minutes, until Bolognaise sauce starts to thicken.
  5. Cook spaghetti in pot of boiling water for 8–10 minutes, until just tender. Drain and return to pot with a drizzle of olive oil to prevent sticking.
  6. Roughly chop baby spinach leaves and add to Bolognaise sauce. Cook 2–3 minutes, until spinach begins to wilt. Season to taste with salt and pepper.While spinach cooks, grate cheese.
  7. Divide spaghetti between bowls or plates and top with beef and bacon Bolognaise. Sprinkle over Colby cheese and chilli flakes (if using).
