South American Bean Burgers with Hand-Cut Fries

Ingredients

HAND-CUT FRIES

  • 300g potatoes, scrubbed and cut into 2cm-thick fries

SOUTH AMERICAN BEAN BURGER PATTIES

  • ½ brown onion, finely diced
  • ½ carrot, grated
  • 4½ teaspoons tomato paste
  • 1 tablespoon South American spice mix
  • 1 tablespoon BBQ sauce
  • 1 can kidney beans, drained and rinsed
  • zest of ½ lemon
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • 1 egg
  • 3 tablespoons oats
  • 2 tablespoons flour
  • 30g feta cheese, crumbled

SALSA

  • 1 tomato
  • 1 spring onion
  • ½ teaspoon vinegar (e.g. red wine, white wine, cider)

SLAW

  • ¼ red cabbage, finely shredded until you have 1 cup worth
  • ½ carrot, grated
  • 2 tablespoons mayonnaise
  • ½ sachet chipotle sauce (optional)

TO SERVE

  • 3 burger buns

Steps

  1. oven to 220oC. Line two oven trays with baking paper. Preheat BBQ hotplate to medium-high heat (if using).
  2. Toss potatoes with a drizzle of oil on first prepared tray and season. Bake for 20–25 minutes, until golden and tender. Turn once during cooking. While potatoes cook, heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion and carrot for 2–3 minutes, until soft.
  3. Add tomato paste, South American spice mix and BBQ sauce and cook a further 1 minute, until fragrant. Transfer to a medium bowl with kidney beans. Mash beans then fold through lemon zest, lemon juice, salt, egg and oats.
  4. Sprinkle flour over a clean board and use clean hands to split the bean mixture into 3 even portions. Roll into balls, place onto flour and press down to form patties about 2cm-thick. Sprinkle with flour. Heat a drizzle of oil in a large pan on medium-high heat.
  5. Cook patties for 2–3 minutes each side, until golden and crispy. Transfer to one side of second prepared tray. Slice burger buns horizontally through the centre and place, closed, beside patties. Sprinkle feta evenly over patties and bake for 4–5 minutes, until buns and warmed through and toasted.
  6. While buns are toasting, finely dice tomato 0.5cm and finely slice spring onions. Mix both in a small bowl with vinegar and set aside. Toss all slaw ingredients in a medium bowl until combined and season to taste with salt and pepper.
  7. place everything in the middle of the table to everyone to build their own burgers.
