Satay Beef and Veggie Noodles

This uses Nadia's favourite way to tenderise a steak, with kiwifruit!


Ingredients

STEAK

  • 550g beef rump steaks, at room temperature
  • 1 kiwifruit

SATAY SAUCE (OPTIONAL, ADULTS)

  • ¼ cup peanut butter
  • 2 tablespoons sweet chilli sauce
  • ½ cup coconut milk (shake well before opening)
  • 2 tablespoons water

VEGGIE NOODLES

  • 2 carrots
  • 2 baby cos lettuces
  • 350g fresh U noodles
  • 1 brown onion, finely diced
  • 1 cup frozen corn, defrosted
  • 2 tablespoons soy sauce
  • 1–1½ teaspoons sesame oil

Steps

  1. a full kettle to the boil.
  2. Slice beef, against the grain, into 1cm-thick strips. Peel and grate kiwifruit, add to a bowl with beef, toss to combine and set aside to marinate. In a small bowl mix all satay sauce ingredients together and set aside. Peel and grate carrots and separate lettuce leaves.
  3. Place noodles in a medium, heat-proof bowl. Pour over boiling water to cover then drain immediately. Use scissors to cut noodles in a few places to make them easier to eat. Heat a drizzle of oil in a large fry-pan or wok on high heat. Pat beef dry with paper towels and season with salt.
  4. Cook beef, in two batches, for 2–3 minutes, until browned on both sides and just cooked through. Set beef aside in a large bowl. Wipe pan clean with a paper towel, add a drizzle of oil and return to medium heat. Cook onion for 2–3 minutes, until soft. Add corn and carrot and stir-fry a further 1 minute.
  5. Add drained noodles to fry-pan, along with soy sauce and sesame oil. Toss to combine and cook for 1 minute, until noodles are heated though. Add veggie noodles to bowl with beef and toss to combine. Set aside.
  6. Add peanut sauce mixture to same pan used to cook veggie noodles and simmer for about 1 minute, until thickened. Add 1 tablespoon of water if sauce becomes too thick.
  7. place beef and veggie noodles, lettuce leaves and satay sauce in the middle of the table for everyone to serve themselves. Spoon beef and veggie noodles into a lettuce cup and top with a spoonful of satay sauce (if using).
