Beef and Bacon Meatball Pizzas with BBQ Mayo Drizzle

Leave BBQ mayo drizzle off and keep cucumber and cherry tomatoes separate for less adventurous kiddies.


Ingredients

BEEF AND BACON MEATBALL PIZZAS

  • 2 light wholemeal pizza bases
  • 70g tomato paste
  • 2 tablespoons olive oil
  • 70g Parmesan cheese, finely grated
  • 1 capsicum, core and seeds removed and sliced 1cm
  • 1 apple, diced 1cm
  • 300g beef and bacon mince

BBQ MAYO DRIZZLE

  • 2 tablespoons BBQ sauce
  • ¼ cup mayonnaise

SALAD

  • 1 teaspoon olive oil
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • ½ teaspoon mustard (e.g. Dijon, wholegrain)
  • ¼ teaspoon runny honey
  • 1 baby cos lettuce
  • ½ telegraph cucumber
  • ½ punnet cherry tomatoes

Steps

  1. oven to 220°C. Preheat two oven trays or pizza stones.
  2. Lay two sheets of baking paper onto the bench and place a pizza base on top of each. In a small bowl, mix together tomato paste and olive oil until well combined.
  3. Divide tomato paste mixture between bases and spread to cover. Sprinkle Parmesan evenly over bases, then top with capsicum and apple. Tear off 3cm chunks of beef and bacon mince, using your fingers and place evenly over pizzas. Season with salt and pepper.
  4. Carefully lift up baking paper with pizzas on top and place onto pre-heated trays then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for 12–14 minutes, until bases are crispy and golden around the edges. Swap trays halfway to ensure even cooking.
  5. While pizzas are cooking, mix BBQ sauce and mayonnaise together in a small bowl and set aside. In a medium bowl, whisk together oil, vinegar, mustard and honey. Cut base off cos lettuce and wash leaves. Thinly slice cos lettuce leaves and add to bowl with dressing.
  6. Dice cucumber 2cm and slice cherry tomatoes in half. Add both to bowl with lettuce, toss to combine and season to taste with salt and pepper. Cut each pizza into 8 squares and spoon over BBQ mayo drizzle.
  7. Divide beef and bacon meatball pizzas between plates and serve salad on the side.
