Chicken, Bacon and Avocado Burgers with Salad

Tasty and fun chicken and bacon burgers!


Ingredients

SALAD

  • 2 teaspoons extra-virgin olive oil
  • ½ teaspoon runny honey
  • ½ teaspoon mustard (e.g. Dijon, wholegrain)
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • ½ cos lettuce
  • ½ punnet cherry tomatoes
  • ½ avocado
  • 50g feta cheese

CHICKEN, BACON AND AVOCADO BURGERS

  • 550g chicken thighs
  • 125g short cut bacon
  • 6 burger buns
  • 1 tomato
  • ½ cos lettuce

AVOCADO MAYO

  • ½ avocado
  • ¼ cup mayonnaise

TO SERVE

  • 2–3 tablespoons sweet chilli sauce (optional)

Steps

  1. oven to 180°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to high (if using).
  2. In a large bowl whisk oil, honey, mustard and vinegar together. Finely slice first measure of lettuce; cut cherry tomatoes in half; dice first measure of avocado 2cm; crumble feta. Add all to bowl with dressing, toss to combine and season with salt and pepper. Set aside.
  3. Pat chicken dry with paper towels and season with salt. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook chicken for about 3 minutes each side, until cooked through. Remove from pan, wrap in foil and set aside to rest. Reserve fry-pan.
  4. Cut bacon rashers in half and return reserved fry-pan to medium heat to cook bacon for about 2 minutes each side, until golden. Set aside on a paper towel to drain any extra oil.
  5. Slice buns in half horizontally and place on prepared tray, cut-side-up. Place in oven for 4–5 minutes, until lightly toasted.
  6. In a small bowl, mash avocado with a fork then mix through mayonnaise. Season with salt and pepper. Thinly slice tomato and remaining lettuce.
  7. Spread buns with avocado mayo, fill with chicken, bacon, tomato and cos lettuce. Top with a drizzle of sweet chilli sauce (if using). Serve salad on the side.
