Courgette and Spinach Falafel with Coconut Slaw

Ingredients

COURGETTE AND SPINACH FALAFEL

  • 1 courgette
  • ½ teaspoon salt
  • 65g ricotta cheese
  • 1 can cannellini beans, rinsed and drained
  • 2 tablespoons mint leaves
  • 1-2 handfuls baby spinach leaves
  • Zest of 1 lime
  • 1½ teaspoons sweet chilli sauce
  • ½ teaspoon fish sauce
  • 2 tablespoons flour

COCONUT SLAW

  • ¼ cabbage
  • 1-2 spring onions
  • ¼ cup coconut milk (shake well before opening)
  • 1 teaspoon fish sauce
  • Juice of 1 lime

TO SERVE

  • 1 tablespoon toasted thread coconut

Steps

  1. BBQ hot plate to medium-high (if using).
  2. Grate courgette and mix with salt. Place in a strainer over a bowl and leave to sit for about 8 minutes, to draw out liquid. Place ricotta and half the cannellini beans into a medium bowl and mash for 1–2 minutes, until smooth.
  3. While courgette sits, finely slice mint and baby spinach. Add to bowl with mashed bean mix. Squeeze excess liquid from courgette, add to bowl, along with all remaining courgette and spinach falafel ingredients and mix until combined. Season to taste with salt and pepper.
  4. Using wet hands, roll mixture into golf ball-sized balls. Place in fridge for about 5 minutes to set.
  5. While falafel set, finely slice cabbage until you have about 1 cup worth and thinly slice spring onions on an angle. Add both to a medium bowl, along with all remaining coconut slaw ingredients. Season to taste with salt and pepper.
  6. Heat a drizzle of oil in a medium fry-pan on medium heat. Add falafel and gently press down with the back of a spoon. Cook for 6–7 minutes, turning occasionally, until golden and crispy.
  7. Place courgette and spinach falafel onto plate and serve coconut slaw on the side. Sprinkle slaw with thread coconut.
