BBQ Pork with Udon and Veggies

This easy one-pan dish will have dinner on the table in no time!


Ingredients

BBQ PORK

  • 300g pork sirloin steak (at room temperature)
  • 1 tablespoon BBQ glaze (reserve remainder)

UDON AND VEGGIES

  • ¼ red onion
  • 1 baby bok choy, end trimmed 1cm, rinsed and leaves separated
  • ½ sweet Palermo capsicum
  • 200g fresh udon noodles
  • Remaining BBQ glaze
  • 1 tablespoon mixed sesame seeds
  • 1 tablespoon soy sauce
  • 1½ teaspoons sesame oil
  • 1½ teaspoons fish sauce

TO SERVE

  • 1–2 spring onions, finely sliced

Steps

  1. a full kettle to the boil. Preheat BBQ grill to high (if using).
  2. Pat pork dry with paper towels, mix with first measure of BBQ glaze in a shallow bowl and set aside to marinade for at least 5 minutes. While pork is marinating, finely slice red onion and bok choy, remove seeds and core from capsicum and finely slice. Set aside.
  3. Heat a drizzle of oil in a large pan on medium-high heat and cook pork for 3–4 minutes each side (depending on thickness) until just cooked through. Reduce heat if starting to burn. Set aside, covered with foil to rest for 5–7 minutes before slicing thickly against the grain. Cover with foil to keep warm.
  4. Wipe pan clean and return to high heat with a drizzle of oil. Stir-fry onion, bok choy and capsicum for about 3 minutes until bok choy is bright green but still crunchy.
  5. While veggies are cooking, place noodles in a large, heat-proof bowl and cover with boiling water. Use a fork to separate strands and drain immediately, ensuring to shake off as much water as possible.
  6. Add noodles to pan with all remaining udon and veggie ingredients. Toss to combine and cook for a further 1 minutes, until heated through. Season to taste with salt and pepper.
  7. place udon and veggies into bowls, top with slices of BBQ pork and garnish with spring onion.
