Open Poached Chicken Bagels and Chips

A fun open bagel dish the whole family can tuck into!


Ingredients

CHIPS

  • 400g potatoes, scrubbed and cut into 1.5cm-thick chips

POACHED CHICKEN

  • 550g chicken tenderloins
  • 4 cups water
  • ½ telegraph cucumber
  • 2 tablespoons natural yoghurt
  • 2 tablespoons GF mayonnaise
  • 1 teaspoon GF Dijon mustard
  • 2–3 tablespoons roughly chopped basil leaves
  • 20g GF sliced almonds

TO SERVE

  • 1 avocado
  • 1 baby cos lettuce
  • 2 tomatoes
  • ½ red onion (optional, adults)
  • 3 GF bagels

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to medium-high (if using).
  2. Toss potatoes with a drizzle of oil on prepared tray and season with salt. Cook for about 25 minutes, until golden and tender. Turn once during cooking. Pat chicken dry with paper towels. Place in a medium pot (with a lid) with water and a pinch of salt. Cover and bring to a gentle boil.
  3. As soon as it starts boiling, turn off heat and leave, covered, for about 5 minutes, until cooked through. The residual heat will cook the chicken. Drain and set aside to cool slightly.
  4. While potatoes and chicken cook, prepare the rest of the meal. Dice cucumber 1cm and place in a medium bowl with yoghurt, mayonnaise, mustard, basil and almonds. In a small bowl, roughly mash avocado flesh with a fork.
  5. Separate lettuce leaves and finely slice tomatoes and red onion (if using). Place all on a large plate or platter. Finely shred chicken, using two forks, then toss through yoghurt mixture to coat. Season to taste with salt and pepper.
  6. Slice bagels in half through the middle and place on an oven tray (without baking paper), cut-side-up. When potatoes have 3 minutes cook time remaining, turn oven to high grill. Grill bagels (on highest oven rack) for about 2 minutes, until toasted. Keep an eye on them so they don’t burn.
  7. Place everything in the middle of the table for everyone to build their own open poached chicken bagels. Spread some avocado on a bagel half, top with a lettuce leaf, tomato, red onion (if using) and a scoop of poached chicken mixture. Serve chips and any remaining salad on the side.
