Turkey and Veggie Patties with Potato Salad

Fun turkey patties with a classic potato salad!


Ingredients

POTATO SALAD

  • 600g baby potatoes, scrubbed and diced 2-3cm
  • 1 corn cob, husk and silk removed
  • ¼ cup mayonnaise
  • 1 teaspoon mustard (e.g. wholegrain, Dijon)
  • ½ bag baby spinach leaves, finely sliced

TURKEY AND VEGGIE PATTIES

  • 1 courgette
  • 450g turkey mince
  • 1 carrot, grated until you have 1 cup worth
  • ½ teaspoon salt
  • 1 egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1¼ cups panko breadcrumbs

DIPPING SAUCE

  • ¼ cup mayonnaise
  • ½-1 tablespoon sweet chilli sauce or tomato sauce

Steps

  1. a medium pot of salted water to the boil. Preheat BBQ hot plate to medium (if using).
  2. Cook potatoes in pot of boiling water for about 12 minutes, until tender but not soft.
  3. Stand corn on its end on a chopping board and use a sharp knife to cut kernels from cob, then add to the pot with potatoes to cook for the last 2 minutes of cook time. Drain and set aside to cool slightly
  4. Grate courgette into a clean tea towel then squeeze out excess moisture and place into a large bowl. Add all remaining turkey and veggie patty ingredients and season with pepper. Use clean hands to mix until well combined.
  5. Use a ¼ cup measure to scoop out mixture and shape into patties. Heat a drizzle of oil in a large fry-pan on medium heat and cook patties for 2-3 minutes each side, until cooked through. Use a fish slice to push down as they cook to help form a crust.
  6. While patties are cooking, whisk mayonnaise and mustard together in a large bowl. Gently toss potatoes, corn and spinach through dressing and season with salt and pepper. In a small bowl mix mayonnaise and sweet chilli or tomato sauce together
  7. Divide turkey and veggie patties and potato salad between plates and serve dipping sauce on this side.
