Cajun Chicken Caesar with Oven Wedges

A tasty traditional chicken Caesar dish!


Ingredients

OVEN WEDGES

  • 400g potatoes, scrubbed and cut into 2-3cm-thick wedges
  • 1½ teaspoons smoked paprika

CAJUN CHICKEN CAESAR SALAD

  • ½ cos lettuce
  • 1 tomato
  • ½ Lebanese cucumber
  • 1 ciabatta loaf
  • 300g chicken tenders
  • 1 tablespoon Cajun spice mix
  • ¼ cup shaved Parmesan cheese

DRESSING

  • 3 tablespoons mayonnaise
  • Juice of ½-1 lemon
  • ½ clove garlic, minced

Steps

  1. oven to 220°C. Line two oven trays with baking paper. Preheat BBQ grill to medium (if using).
  2. Toss potatoes with smoked paprika and a drizzle of oil on first prepared tray. Spread out in a single layer and season with salt and pepper. Bake for 20-22 minutes, until golden and tender. Turn once during cooking.
  3. While potatoes are cooking, prepare the salad. Roughly chop lettuce; dice tomato 1cm; thinly slice cucumber into rounds. Set all aside.
  4. Dice ciabatta into 2cm pieces then toss with a drizzle of olive oil on second prepared tray. Spread out in a single layer and bake for 8-10 minutes, or until golden. Set aside. Pat chicken dry with paper towels. Place in a medium bowl with Cajun spice mix, season with salt and toss to coat.
  5. Heat a drizzle of oil in a large fry-pan on medium heat. Cook chicken for 2-3 minutes each side (depending on thickness), or until cooked through. Remove from pan and set aside, covered with foil, to rest.
  6. Combine all dressing ingredients together in a large bowl. Add lettuce, tomato, cucumber, ciabatta croutons and Parmesan cheese to bowl with dressing, toss to combine and season to taste with salt and pepper.
  7. Divide Caesar salad, Cajun chicken and oven wedges between plates.
