Caramelised Onion and Apple Pizzas with Mozzarella Salad

Ingredients

CARAMELISED ONION AND APPLE PIZZA

  • ½ tablespoon butter
  • ½ red onion, finely sliced
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon brown sugar
  • 1 apple
  • ½ courgette
  • 2 tablespoons tomato paste
  • 1 tablespoon sweet chilli sauce
  • ½ teaspoon olive oil
  • 1 light, wholemeal pizza base
  • 1 cup grated Colby cheese
  • ½ capsicum, core and seeds removed and diced 1cm

MOZZARELLA SALAD

  • 2 tomatoes
  • ½ Lebanese cucumber
  • ¼ cos lettuce
  • 50g mozzarella cheese
  • Remaining apple (optional)
  • ½-1 teaspoon vinegar (e.g. red wine, white wine, balsamic)

TO SERVE

  • 50g garden pesto
  • 1 tablespoon mayonnaise

Steps

  1. oven to 220°C. Preheat an oven tray (or pizza stone if you have one).
  2. Heat a drizzle of oil in a medium fry-pan on medium heat. Add butter and onion and cook for about 5 minutes, stirring often, until brown. Add vinegar and sugar and cook for about 30 seconds, until caramelised. Remove core and finely dice apple (reserve half for salad) and thinly slice courgette.
  3. In a small bowl, combine tomato paste, sweet chilli sauce and olive oil. Lay a sheet of baking paper on bench and place pizza base on top. Spread tomato paste mixture evenly over base and sprinkle with cheese, caramelised onion, courgette, half the apple and capsicum.
  4. Carefully lift up baking paper with pizza on top and place onto preheated tray (or stone) then slide baking paper away (use a fish slice to help with this). Season with salt and pepper.
  5. Cook pizza for 12-14 minutes, until base is crisp and golden around the edges. While pizza cooks, prepare the salad. Dice tomatoes and cucumber 2cm; roughly chop cos lettuce; tear mozzarella into small chunks.
  6. Toss all mozzarella salad ingredients together in a large bowl with a drizzle of olive oil and season to taste with salt and pepper. In a small bowl, combine garden pesto and mayonnaise. Cut pizza into 6-8 pieces and drizzle with pesto mayonnaise.
  7. Divide slices of caramelised onion and apple pizza between plates and serve mozzarella salad on the side.
