Beef and Bacon Bites with Roast Potato Salad

Delicious bites with a surprising cheesy center


Ingredients

ROAST POTATO SALAD

  • 600g baby potatoes, diced 2cm
  • 75g baby spinach leaves, roughly chopped
  • 2-3 tablespoons mayonnaise
  • 2 teaspoons wholegrain mustard
  • 2 tablespoons finely chopped parsley leaves

BEEF AND BACON BITES

  • 1 courgette
  • 450g beef and bacon mince
  • ¼ cup panko breadcrumbs
  • 75g Edam cheese, diced 1cm

SALAD

  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • 1 teaspoon olive oil
  • ¼ teaspoon runny honey
  • ½ punnet cherry tomatoes
  • 1 apple
  • ½ telegraph cucumber

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Preheat BBQ hot plate to medium heat (if using).
  2. Toss potatoes on prepared tray with a drizzle of oil and season with salt and pepper. Roast for 18-20 minutes, until tender. Turn once during cooking. While potatoes cook, grate courgette until you have ½ cup worth.
  3. Place courgette into a clean tea towel and squeeze out excess moisture. Add to a medium bowl, along with beef and bacon mince and breadcrumbs. Use clean hands to combine well the divide mixture into 12 equal portions, about 1 heaped tablespoon scoop.
  4. Take a piece of cheese and push into the middle of the mince mixture to completely encase it, then roll into a ball. Repeat with remaining cheese and mixture.
  5. Heat a drizzle of oil in a large fry-pan on medium-high heat and cook beef bites for 6-7 minutes, until browned on all sides and bites are cooked through. While bites are cooking, prepare the salad.
  6. In a medium bowl mix vinegar, oil and honey together. Cut cherry tomatoes in half and dice apple and cucumber 1-2 cm. Add all to bowl with dressing and toss to combine. In a large bowl mix mayonnaise, mustard and parsley together, add roasted potatoes and toss to combine. Season to taste.
  7. divide roast potato salad, beef and bacon bites and salad between plates.
