Turkey, Tomato and Sour Cream Bolognaise

This turkey bolognaise is sure to warm you up.


Ingredients

TURKEY, TOMATO AND SOUR CREAM BOLOGNAISE

  • ¼ red onion, finely diced
  • 1 clove garlic, minced
  • 1½ tablespoons bolognaise spice blend
  • ½ teaspoon salt
  • 300g turkey mince
  • 1 can chopped tomatoes
  • ¼ cup chicken stock
  • 300g pennette pasta
  • ½ courgette, grated
  • ¼ cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon balsamic vinegar

SALAD

  • ½ iceberg lettuce
  • ½ Lebanese cucumber
  • 1 Roma tomato
  • 1 teaspoon vinegar (e.g. white wine, red wine, balsamic)

TO SERVE

  • ¼ cup grated Parmesan cheese

Steps

  1. a large pot of salted water to the boil.
  2. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook onion and garlic for 1-2 minutes, until softened. Add bolognaise spice blend and salt to pan and cook for about 1 minute, until fragrant. Add turkey mince and cook for 2-3 minutes, breaking up with a wooden spoon as it cooks, until starting to brown.
  3. Reduce heat to medium and add canned tomatoes and stock. Bring to a simmer and cook for 6-7 minutes, until sauce has thickened and reduced.
  4. While sauce is simmering, cook pasta in pot of boiling water for 8-9 minutes, until just tender. Drain and return to pot with a drizzle of oil to prevent sticking.
  5. Prepare the salad. Roughly chop lettuce and dice cucumber and tomato 1cm. Toss together in a medium bowl with vinegar and a drizzle of olive oil. Season to taste with salt and pepper.
  6. Once bolognaise sauce has thickened, stir through courgette, sour cream, Worcestershire sauce and balsamic vinegar. Bring back to a simmer and then remove from heat. Season to taste with salt and pepper.
  7. place cooked pasta into bowls and spoon over turkey, tomato and sour cream bolognaise. Sprinkle with Parmesan cheese and serve salad on the side.
