Pulled Beef Tacos with Chipotle Sour Cream

Ingredients
PULLED BEEF TACOS
- 10 wholemeal tortilla wraps
- ½ brown onion, finely diced
- 1 carrot, grated
- 1 tablespoon taco spice mix
- 1 can chopped tomatoes
- ½ cup beef stock or water
- 400g pulled beef
- 1 teaspoon soy sauce
- ¼-½ teaspoon brown sugar
- ¼ teaspoon salt
CHIPOTLE SOUR CREAM
- 1 pottle sour cream
- 1-2 teaspoons chipotle sauce (optional, adults)
TO SERVE
- ½ cos lettuce
- 1 tomato
- 1 cup grated Edam cheese

oven to 180°C.

Wrap tortillas, in a stack, in foil and warm in the oven for 15 minutes. While tortillas warm, prepare the rest of the meal.

Heat a drizzle of oil in a large frypan on medium-high heat. Cook onion and carrot for 3-4 minutes, until softened. Add taco spice mix and cook for 1 minute, until fragrant.

Add canned tomatoes, stock/ water, pulled beef, soy sauce, sugar and salt. Bring to a simmer and cook for 4-5 minutes, breaking up beef with a wooden spoon as it cooks, until beef is heated through and sauce has thickened.

While beef is simmering, prepare veggies. Finely slice lettuce and dice tomato 1cm.

In a small bowl mix chipotle sour cream ingredients together (if using).

divide tortillas between plates and fill with pulled beef, lettuce, tomato, cheese and a dollop of chipotle sour cream. Roll up and enjoy.
