Southwest Turkey Lettuce Cups with Kumara Shoestrings and Ranch Dressing

These turkey lettuce cups are bursting with southwest flavour.


Ingredients

KUMARA SHOESTRINGS

  • 400g red kumara, scrubbed and cut into 0.5cm-thick shoestrings

SOUTHWEST TURKEY LETTUCE CUPS

  • 300g turkey mince
  • 1 courgette, grated
  • 1 tablespoon Southwest spice mix
  • 1 tablespoon chipotle sauce

TO SERVE

  • 2 baby cos lettuce
  • ½ telegraph cucumber
  • 80g ranch dressing
  • 40g spiced melon seeds

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Toss kumara shoestrings on prepared tray with a drizzle of olive oil. Season with salt and pepper and toss to coat evenly. Arrange in a single layer and roast in oven for 20-25 minutes, until golden brown and tender. Turn once during cook time to ensure even cooking.
  3. Heat a drizzle of oil in a large fry-pan or wok on high heat. Add turkey in small chunks and use a wooden spoon to break up mince as it cooks. Cook, stirring occasionally, for 4-5 minutes, or until turkey is cooked and starting to brown.
  4. Grate courgette and add to pan when turkey is starting to brown. Cook for 2 minutes, until courgette is soft. Add Southwest spice mix and cook a further 1 minute.
  5. Remove pan from heat and stir through chipotle sauce.
  6. Cut bases off lettuce and separate leaves. Cut cucumber in half lengthways and thinly slice.
  7. place everything in the middle of the table and let people construct their own lettuce cups. Spoon some turkey into each lettuce cup and top with a few slices of cucumber. Drizzle over a little ranch dressing and sprinkle with spiced melon seeds. Serve kumara shoestrings on the side.
