Chicken, Bacon and Sweetcorn Salad with Chipotle

A colourful chicken dish bursting with fresh, smoky and sweet flavours.


Ingredients

BACON AND SWEETCORN SALAD

  • ¼ cup pearl barley
  • 1 corn cob
  • ¼ brown onion
  • 1 spring onion
  • ½ Roma tomato
  • 50g bacon mince
  • 1-1½ teaspoons maple syrup or runny honey

CHIPOTLE

  • 1 tablespoon chipotle sauce
  • 2 tablespoons mayonnaise

CHICKEN

  • 100g chicken thigh
  • ½ teaspoon maple syrup or runny honey

Steps

  1. a small pot of salted water to the boil. Preheat BBQ hot plate or grill to medium-high (if using).
  2. Add barley to pot of boiling water and simmer for 12-15 minutes, until tender with a slight bite. Drain well. Heat a medium fry-pan on medium-high heat. Remove husk and silk from corn, drizzle with olive oil and season with salt and pepper.
  3. Add corn to pan and cook for 8-10 minutes, turning occasionally, until charred and tender. When cool enough to handle, stand corn cob on its end on a chopping board and use a sharp knife to slice down to remove kernels. Set kernels aside and reserve pan. While corn cooks, prepare rest of meal.
  4. Mix together chipotle sauce and mayonnaise in a small bowl. Set aside. Finely dice onion; thinly slice spring onion; dice tomato 1cm. Set all aside. Pat chicken dry with paper towels and season with salt and pepper. Wipe out reserved pan and heat a drizzle of oil on medium heat.
  5. Cook chicken for 3-4 minutes each side (depending on thickness), or until cooked through. Drizzle with second measure of maple syrup/ honey, remove from pan and set aside, covered with foil, to rest. Wipe pan clean and return to a medium heat with a drizzle of oil.
  6. Add bacon and onion to pan and cook for 2-3 minutes, breaking up bacon with a wooden spoon as it cooks, until starting to brown and bacon is cooked. Add cooked barley, corn and all remaining bacon and sweetcorn ingredients to pan. Toss until warmed through and season to taste with salt and pepper.
  7. place bacon and sweetcorn salad onto a plate and top with chicken and a dollop of chipotle.
