Curried Chicken Pasta Salad

A quick and easy midweek meal.


Ingredients

CURRIED CHICKEN PASTA SALAD

  • 350g pasta bows (about 4½ cups)
  • ½ teaspoon salt
  • ½ bag broccolini
  • 1 packet poached chicken
  • 1 courgette
  • 1 punnet grapes
  • ½ bag baby spinach leaves
  • 1 tablespoon fish sauce
  • 1 pottle curried dressing

TO SERVE

  • 1 sachet slivered almonds

Steps

  1. a full kettle to the boil.
  2. Add boiling water and salt to a medium pot and bring to the boil with the lid on. Add pasta and cook for 12 minutes, until almost tender. While pasta cooks, cut broccolini into 2cm pieces.
  3. While pasta cooks, thinly slice poached chicken then roughly chop into bite-sized pieces. Season to taste with salt and pepper. Grate courgette and place in a large bowl with chicken and set aside.
  4. When pasta has finished cooking, add broccolini to pot with pasta and cook for a further 3 minutes, until broccolini and pasta are tender. Drain well and drizzle with a little olive oil to prevent sticking.
  5. Add broccolini and pasta to bowl with courgette and chicken. Add all remaining curried chicken pasta salad ingredients. Toss well to combine and season to taste with salt and pepper.
  6. divide curried chicken pasta salad between bowls and top with slivered almonds.
