Pork Sirloin Steaks with Broccoli Couscous and Pineapple Salsa

Ingredients

BROCCOLI COUSCOUS

  • 1 cup stock (e.g. chicken, vegetable)
  • 1 teaspoon olive oil
  • 1 cup couscous
  • ¼ teaspoon salt
  • 1 head broccoli, florets and stalk finely chopped

COUSCOUS DRESSING

  • 2 tablespoons olive oil
  • 1 teaspoon runny honey
  • 1 teaspoon mustard (e.g. Dijon, wholegrain)
  • 3 teaspoons vinegar (e.g. red wine, white wine, cider)

PORK SIRLOIN STEAKS

  • 550g pork sirloin steaks (at room temperature)

PINEAPPLE SALSA

  • ½ telegraph cucumber
  • ¼ red onion (optional, adults)
  • ½ capsicum
  • 3 tablespoons mint leaves
  • 1 can pineapple pieces, 1 tablespoon juice reserved then drained

Steps

  1. a medium pot of salted water to the boil. Preheat BBQ grill or hot plate to high (if using).
  2. Bring stock to the boil in a medium pot (with a lid) on high heat. Once boiling turn off heat, add oil, couscous and salt, stir, cover and leave for 5 minutes, then fluff up grains with a fork. Cover to keep warm.
  3. While couscous cooks, cook broccoli in pot of boiling water for 2-3 minutes, until tender. Drain and set aside. While broccoli cooks, add all couscous dressing ingredients to a large bowl and whisk to combine. Set aside.
  4. Pat pork dry with paper towels and season with salt. Heat a drizzle of oil in a large fry-pan on high heat. Cook pork for 2-3 minutes each side, or until just cooked through. Set aside to rest, wrapped in foil. While pork cooks and rests, prepare pineapple salsa.
  5. Finely dice cucumber; finely dice red onion (if using), until you have 1 tablespoon worth; remove core and seeds from capsicum and finely dice; finely chop mint; roughly chop pineapple pieces. Add all to a medium bowl along with reserved pineapple juice and toss to combine. Season to taste.
  6. Add cooked couscous and broccoli to bowl with dressing, toss to combine and season to taste. Slice pork thinly against the grain.
  7. divide broccoli couscous between plates. Top with slices of pork sirloin steak and spoon pineapple salsa over the top of pork.
