Turkey Patties with Cranberry and Camembert

Cranberry and camembert, a classic combination.


Ingredients

POTATO BITES

  • 600g potatoes, scrubbed and diced 2cm

TURKEY PATTIES

  • 450g turkey mince
  • 1/3 cup GF panko breadcrumbs
  • 1 egg
  • 1 tablespoon GF turkey seasoning
  • 2½ teaspoons GF soy sauce
  • ½ teaspoon salt
  • ½ block camembert cheese, sliced 0.5cm then cut in half widthways

SALAD

  • 1 tomato
  • ½ telegraph cucumber
  • 1 iceberg lettuce
  • 2 tablespoons GF mayonnaise (optional)
  • ½ block camembert cheese, cut into thin wedges

TO SERVE

  • 100g GF cranberry sauce

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Preheat a second oven tray (on bottom rack of oven). Preheat BBQ hot plate to medium (if using).
  2. Toss potatoes with a drizzle of olive oil on prepared tray. Season with salt and pepper and roast for about 25 minutes (on top rack of oven), until golden and tender. Turn once during cooking.
  3. In a medium bowl, mix all turkey patty ingredients together (except cheese) until combined. Using a ¼ cup measure and clean, damp hands, shape mixture into balls then flatten to about 1cm-thick.
  4. Heat a drizzle of oil in a large (preferably non-stick) fry-pan on medium heat. Cook patties, in two batches, for about 1 minute each side, until golden. When potatoes have about 7 minutes cook time remaining, move potatoes to bottom rack of oven and place patties on preheated tray.
  5. Finish cooking patties in oven (on rack above potatoes) for about 3 minutes, until cooked through. Top with a slice of camembert and return tray to oven for 1-2 minutes, until cheese has melted.
  6. While turkey patties cook, prepare the salad. Dice tomato and cucumber 1cm and shred lettuce. Toss all in a large bowl with mayonnaise (if using) and camembert wedges. Season to taste with salt and pepper.
  7. divide salad between bowls or plates, top with 1-2 turkey patties and dollop over cranberry sauce. Serve potato bites on the side.
