Hawaiian Carne Asada Fries with Pineapple Salsa Fresca

An American take on a traditional Mexican dish.


Ingredients

HAWAIIAN CARNE ASADA FRIES

  • 150g potatoes, scrubbed and cut into 0.5cm-thick shoestring fries
  • 1-2 tablespoons finely grated Parmesan cheese
  • 150g beef sirloin steak (at room temperature)
  • ½ tablespoon soy sauce
  • 1 tablespoon pineapple salsa
  • 1 teaspoon vinegar (e.g. cider, white wine)
  • 1 teaspoon brown sugar
  • 1 clove garlic, finely diced
  • Zest of ½ lemon
  • ½ teaspoon sesame oil

PINEAPPLE SALSA FRESCA

  • ½ tomato
  • ¼ Lebanese cucumber
  • ¼ red onion
  • 1 clove garlic
  • ½ baby cos lettuce
  • 1 tablespoon pineapple salsa
  • Juice of ½ lemon

TO SERVE

  • 1½ tablespoon chopped coriander leaves
  • 1-2 tablespoons ricotta cheese

Steps

  1. oven to 230°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to high (if using).
  2. Toss potatoes with a drizzle of oil on prepared tray and season with salt and pepper. Cook for 10 minutes to start with then remove tray from oven and turn fries. Sprinkle over Parmesan and cook a further 5-7 minutes, until fries are golden and tender.
  3. While potatoes cook, pat beef dry with paper towels and place in small bowl with all remaining Hawaiian carne asada fries ingredients. Set aside to marinate, while you prepare the pineapple salsa fresca.
  4. Dice tomato and cucumber 1cm; finely dice red onion; finely chop second garlic clove; thinly slice lettuce. Mix together in a medium bowl, along with pineapple salsa, lemon juice and a drizzle of olive oil. Season to taste and set aside. Heat a drizzle of oil in a small fry-pan on medium-high heat.
  5. Remove beef from marinade and pat dry with paper towels. Cook for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered with foil, for 2-3 minutes before slicing thinly against the grain.
  6. place Hawaiian carne asada fries onto a plate. Top with pineapple salsa fresco, coriander and ricotta.
