Bacon and Veggie Pizzas with Basil Pesto Drizzle

Friday night is pizza night!


Ingredients

BACON AND VEGGIE PIZZAS

  • 3 GF pizza bases
  • 1 pottle tomato paste
  • 2 tablespoons GF mild sweet chilli sauce
  • 2 cups grated Colby cheese
  • 1 courgette, cut in half lengthways and sliced into 0.5cm-thick rounds
  • 1 capsicum, core and seeds removed and diced 1cm
  • 300g GF minced bacon

BASIL PESTO DRIZZLE

  • 50g GF basil pesto
  • 2 tablespoons mayonnaise
  • ½-1 tablespoon cold water

SALSA

  • 1 tomato
  • 2/3 telegraph cucumber
  • ½ avocado
  • 1½ teaspoons vinegar (e.g. red wine, white wine, balsamic)

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Lay three sheets of baking paper on the bench and place pizza bases on top. Mix tomato paste and sweet chilli sauce together in a small bowl. Divide tomato mixture between bases and spread evenly to cover.
  3. Sprinkle cheese evenly over the bases, then top with courgette and capsicum. Tear away small chunks of bacon mince and place on top of pizza.
  4. Slice one pizza in half. Carefully lift up baking paper with pizzas on top and place one and a half pizzas on each preheated tray (or pizza stone) then carefully slide baking paper away (use a fish slice to help with this).
  5. Cook pizzas for 12-14 minutes, until bases are crispy and golden around the edges. Swap trays halfway to ensure even cooking. In a small bowl, combine all basil pesto drizzle ingredients and set aside.
  6. While pizzas cook, dice tomato, cucumber and avocado flesh all 1cm. Toss in a medium bowl with vinegar and a drizzle of olive oil. Season with salt and pepper. Top pizzas with basil pesto drizzle and slice into 6 pieces.
  7. divide bacon and veggie pizza slices between plates and serve salsa on the side.
